Of Necks and Feet
Dec. 21st, 2008 07:07 pmI braved the cold to procure extra slabs of bacon at the farmer's market yesterday, and also indulged in a bit of a luxury: old hen. The bird still had its neck and feet attached, which is good news for the stew. Lots of flavor and mouthfeel in those two oft-discarded bits. I'm stewing it right now, feet and all. Yum.
